Aloo Baingan Ki Sabzi

Directions:

1. Heat oil in a pan with heat on high. Add the onions when oil is hot. Saute till light pink, for about 5 minutes stirring continuously.
2. Add garlic & saute till light brown stirring all the time.
3. Add the tomatoes. Stir a few times and add the spices and salt. Reduce gas to low and cook till tomatoes are soft & mashed.
4. Add the potatoes. Mix well and cover with lid. Let them cook. Check back after 5 minutes.
5. Lift lid. Check if potatoes have turned soft. Keep checking every 5 minutes till the potatoes turn a bit soft.
6. If potatoes are taking longer to sooften & the masala is getting dry add a little water so that the masala does not burn. Then stir and repeat the above process.
7. Once potatoes are a bit soft add the baingan. Also add half the hara dhania (cilantro). Stir and cover with lid.
8. Cook till the baingan turn soft checking oon them every 4-5 minutes.
9. When the aloo baingan is done transfer to a serving bowl & garnish with the remaining cilantro.
Serve hot with roti or paratha.
