Hyderabadi Baingan Gravy is a very delicious dish.Goes very well with Roti,Chapati,Naan,Paratha and all other Indian Breads.Do subscribe if you like our dishes.

The following is the video transcript which has the ingredients and method of preparation:

"Today we are going to make Brinjal (Eggplant) curry. You will need :
- 1 Kg of Brinjal ( egg plant ) well cut into 4 pieces vertically as shown.
- 1/2 a cup of Tamarind water.
- 2 big or 3 small pieces of Onion well cut.
- 7 - 8 pieces of garlic and a few curry leaves as shown.
- 1/2 a cup of sesame seeds.
- 1/2 tsp. of Turmeric powder.
- 4 to 5 tbsp. of refined sunflower oil.
- Salt to taste
- 2 to 3 tsp. of Chilly powder or as per taste
- 1 cup of cut coconut pieces
- less than 1/2 a cup of coriander seeds
- 1 well chopped onion kept separately.
- 1/2 tsp. of Mustard seeds.
- 4 - 5 tomatoes ground to paste.

Preparation :

1) Cut the Brinjal (Egg plant) as shown.
2) Preheat a deep frying pan for a few minutes.
3) Add 1 tsp. of refined sunflower oil.
4) Add the coriander seeds.
5) Add just less than 1/2 tsp of Fenugreek seeds (optional) into it.
6) Add the garlic.
7) Add the coconut pieces and the sesame seeds.
8) Fry until light brown for 2 - 3 minutes.
9) It will look like this after frying it for 2 - 3 minutes. Turn off the gas stove.
10) Transfer the contents into a mixer.
11) Add the 3 chopped onions.
12) Add 1 cup or 1/2 a glass of water into this and grind it to paste.
13) The ground mixture looks like this.
14) Now, heat the same deep fry pan and add 2 - 3 tbsp. of refined sunflower oil.
15) Add the mustard seeds.
16) Add the well chopped onion
17) Add the curry leaves.
18) Add the turmeric powder.
19) Put the Brinjals (egg plant) into it.
20) Fry the Brinjal well.
21) Reduce to medium flame and add salt to taste.
22) Add the chilly powder.Mix it well.
23) Let the egg plant cook for 10 -15 minutes in low flame and keep stirring every 2 -3 minutes.
24) It takes 10 -15 minutes for it to cook well. This will also depend on the softness of the egg plant.
25) The Brinjal will now look like this. Pour the Tamarind water into it.
26) Pour the tomato paste into it.
27) Add the ground mixture into it and mix the contents well on medium flame.
28) If you feel the amount of salt is less you can add some more as per taste.
29) If you feel that the gravy is very viscous you can add 1/2 a cup of water at this point.
30) Boil this gravy for at least 15 -20 minutes in medium flame.
31) It takes that much time for the gravy to mix well with the Brinjal (egg plant).
32) Close it with a lid and let it cook for 15 minutes.
33) The Hyderabadi Brinjal Gravy now looks like this.
34) You can continue to fry and boil it for another 5 - 10 minutes if you feel the Brinjal is not soft enough.
35) Hyderabadi Baingan Gravy tastes delicious with Roti , Naan , Parantha and all other Indian breads."
