Cauliflower Mash is a healthy substitute for mashed potatoes. Only 1 (8-ounce) potato is added to the mash along with 1/4 cup heavy cream, making this easy side dish deliciously creamy. You'll add more nutrients and flavor to this traditional side.

Preparation
1. Place cauliflower florets and chopped baking potato in a saucepan; cover with water.

2. Bring to a boil; reduce heat, and simmer 14 minutes or until very tender.

3. Drain; place in food processor. Add cream, salt, and pepper; process until smooth (about 1 minute).

Serves 4 (serving size: about 3/4 cup)
