Here’s step-by-step Aloo Gobi recipe recipe easy and quick to make. Watch this video to know how to prepare Aloo Gobi ki sabzi The ingredients needs are.
Cauliflower 1
Boiled Potato 3 – 5
Mustard Oil 3-5 table spoon
Onion 1 - 2 (Diced)
Tomato 1 - 2 (Diced)
Bay leaf 1 - 2
Salt to taste
Green chili 3 - 5
Garlic Clove 10 - 15
Ginger 1 inch
Cumin Powder 1 tea spoon
Turmeric powder 1 tea spoon
Red Chili Powder 1 tea spoon
Kasoori Methi 1 tea spoon
Coriander Whole 1 tea spoon
Cinnamon 1 - 2 medium size
Black Cardamom 2
Green Cardamom 2
Mace (Javitri) 1 small piece
Clove 5 - 6
Black pepper whole 10-15
Fennel (Saunf) 1/2 tea spoon
Chicken Masala 1 tea spoon (Optional)

To start making aloo gobi ki sabzi, first we will put some mustard oil to the hot pan. Once the oil is heated up we will add Coriander, Cinnamon, Black Cardamom, Green Cardamom, Mace (Javitri) , Clove, Black pepper and Fennel (Saunf) and stir it well. To this we add Onion, Tomato, Green Chili, Garlic Clove and Ginger. Fry this for 5-6 min on a low flame with the lid close. Once done rest it to cool down to the room temperature as we have to grind this to make a fine paste.

In the mean while shallow fry the cauliflower and par-boiled potatoes.

Once our mixture cooled add this to the mixture jar and make a paste. This paste will be used as our masala in the next course of cooking.

Once again to the hot pan add some mustard oil. To this add bay leaf and then add the masala paste. Fry this for 2-3 min. To this add rest of the spices such as Cumin Powder, Turmeric Powder, Red Chili Powder and Salt to taste. Cook this masala in the pan to 5-6 min. You can sprinkle water if need. At this stage, our masala will be half cooked. To this add the shallow fried potato and cook this for another 3-5 min. Add shallow fried cauliflower after min of adding potato and cook this for another 3-5 min.

Add water according to your need and let it simmer to 2 min. Finally add Kasoori Methi and turn off the flame.

Our Aloo Gobi ki sabzi is ready to be served. Add coriander for garnishing. This can be a main course curry and can be taken with Rice or Chapatis.
